Milanese Beef Osso Bucco
Ingredients:
- 4 to 6 pounds of Grass Fed Beef osso buco
- 2 tbsp of extra virgin olive oil
- 1 cup of carrots, diced
- 1 cup of celery, diced
- 1 yellow onion, diced
- 6 cloves of garlic, minced
- 1 tbsp of fresh thyme, chopped
- 1 tbsp of fresh rosemary, chopped
- 1 cup of dry white wine
- 1 cup of beef stock
- 1 can of diced tomatoes
- ¼ cup of flour
- 1 tsp of sea salt
- 1 tsp of freshly ground pepper
Directions:
- Preheat oven to 325 degrees F.
- In a dutch oven, heat the olive oil over medium heat.
- Rub the salt and pepper onto the osso buco. Lightly cover with flour and brown for 4-5 minutes per side. Remove the osso buco and set aside.
- Saute the carrots, celery and onion for 5 minutes or until softened. Add the garlic, thyme and rosemary and continue cooking for 3 to 5 minutes.
- Add the beef, wine, stock and diced tomatoes and cook covered in the oven for an hour and a half.
