Milanese Beef Osso Bucco

Ingredients:

  • 4 to 6 pounds of Grass Fed Beef osso buco 
  • 2 tbsp of extra virgin olive oil
  • 1 cup of carrots, diced
  • 1 cup of celery, diced
  • 1 yellow onion, diced
  • 6 cloves of garlic, minced
  • 1 tbsp of fresh thyme, chopped
  • 1 tbsp of fresh rosemary, chopped
  • 1 cup of dry white wine
  • 1 cup of beef stock
  • 1 can of diced tomatoes
  • ¼ cup of flour
  • 1 tsp of sea salt
  • 1 tsp of freshly ground pepper

Directions: 

  1. Preheat oven to 325 degrees F. 
  2. In a dutch oven, heat the olive oil over medium heat. 
  3. Rub the salt and pepper onto the osso buco. Lightly cover with flour and brown for 4-5 minutes per side. Remove the osso buco and set aside.
  4. Saute the carrots, celery and onion for 5 minutes or until softened. Add the garlic, thyme and rosemary and continue cooking for 3 to 5 minutes. 
  5. Add the beef, wine, stock and diced tomatoes and cook covered in the oven for an hour and a half.
