Beef Barley Soup Meal (for 4)
Ingredients:
- 2 pounds of Grass Fed Beef cubes
- 2 tbsp of extra virgin olive oil
- 10 cups of beef broth
- 1 tsp of sea salt
- 1 tsp of freshly ground black pepper
- 3 bay leaves
- 1 tbsp of fresh thyme, chopped
- 1 pound of fresh mushrooms, sliced
- 3 celery stalks, sliced
- 2 yellow onions, sliced
- 6 cloves of garlic, minced
- 2 cups of potatoes, cubed
- 4 carrots, chopped
- 1 cup of barley
Directions:
- Heat the oil in a large saucepan over medium heat. Sear the beef cubes and brown them on all sides, approximately 5 to 7 minutes total.
- Set the beef aside and saute the garlic and onions for 5 minutes or until softened. Deglaze the saucepan with the beef broth.
- Add the beef and remaining ingredients and bring to a boil. Reduce the heat and cook for 30 to 40 minutes or until the barley is tender.
- Remove the bay leaves before serving.
