Beef Barley Soup Meal (for 4)

Ingredients:

  • 2 pounds of Grass Fed Beef cubes
  • 2 tbsp of extra virgin olive oil
  • 10 cups of beef broth
  • 1 tsp of sea salt
  • 1 tsp of freshly ground black pepper
  • 3 bay leaves
  • 1 tbsp of fresh thyme, chopped
  • 1 pound of fresh mushrooms, sliced
  • 3 celery stalks, sliced
  • 2 yellow onions, sliced
  • 6 cloves of garlic, minced
  • 2 cups of potatoes, cubed
  • 4 carrots, chopped
  • 1 cup of barley

Directions: 

  1. Heat the oil in a large saucepan over medium heat. Sear the beef cubes and brown them on all sides, approximately 5 to 7 minutes total. 
  2. Set the beef aside and saute the garlic and onions for 5 minutes or until softened. Deglaze the saucepan with the beef broth. 
  3. Add the beef and remaining ingredients and bring to a boil. Reduce the heat and cook for 30 to 40 minutes or until the barley is tender. 
  4. Remove the bay leaves before serving.
