Asian Stir Fry

Ingredients:

  • 2 pounds of Grass Fed Beef steak strips (alternatively, slice sirloin steak into ¼” strips)
  • 2 tbsp of extra virgin olive oil
  • ⅓ cup of soy sauce
  • 2 tsp of sesame oil
  • 3 cloves of garlic, minced
  • 2 tsp of grated fresh ginger
  • 1 tsp of freshly ground black pepper
  • 2 white onions, chopped
  • 2 cups of bok choy, chopped
  • 1 red bell pepper, chopped
  • 1 cup of snow peas
  • 2 carrots, sliced
  • 1 cup of Szechuan sauce
  • 1 tbsp of sesame seeds, optional
  • ¼ cup of freshly chopped green onion, optional

Directions:

  1. Prepare marinade. In a bowl, mix together the soy sauce, sesame oil, garlic, ginger and black pepper.
  2. Pour the marinade over the beef. Cover and refrigerate for at least 1 hour.
  3. Heat 1 tbsp of olive oil in a frying pan or wok over medium heat. Remove beef from marinade and saute for 5 minutes, or until meat is cooked through. Place beef in a dish and set aside.
  4. Pour the remaining 1 tbsp of olive oil into the pan or wok. Add the carrots and onions. Saute for 2-3 minutes or until the vegetables begin to soften. Add the bok choy, bell pepper and snow peas and saute for an additional 3-5 minutes.
  5. Reduce heat to low. Stir in the beef alongside the vegetables, add the szechuan sauce and mix until all the vegetables and meat are well coated.
  6. Remove from the heat and serve over rice or noodles.
  7. Optional. Sprinkle sesame seeds and green onion garnish.
