Cross Rib Roast

Ingredients: 

  • 3 to 4 pound Grass Fed Beef cross rib roast
  • 2 tbsp of extra virgin olive oil
  • 2 yellow onions, sliced
  • ¼ cup of softened butter
  • ¼ cup of beef stock
  • 5 cloves of garlic, minced
  • 1 tbsp of fresh rosemary, chopped
  • 1 tsp of freshly ground pepper
  • 3 slices of bacon

Directions:

  1. Preheat oven to 350 degrees F. 
  2. Heat the oil in a dutch oven over medium-high heat. Brown the roast for 2 minutes on each side. 
  3. Set the beef aside. Place the sliced onion at the bottom of the dutch oven, then place the beef back on top and cover with bacon. 
  4. Meanwhile, in a small bowl mix together the butter, beef stock, garlic, rosemary and ground pepper. 
  5. Pour the mixture over the beef, place the lid on the dutch oven and cook for 35-40 minutes or until the internal temperature reaches 135 degrees F. 
  6. Allow the roast to sit for 10 minutes before serving.
